It won't do any harm but your best bet is to leave the suspension in the normal position unless you need to otherwise i.e. maintenance (low) or changing a wheel (high) etc.
And yes the suspension will sink to the low position when the engine is turned off. This is normal and how long it takes depends on the condition of the hydraulic system components. It is very common for the rear of the car to sink quickly and the front to follow, but some cars stay at normal height for days.
Just remember to let the suspension rise before you drive off anywhere!!
